RECIPE: GRILLED FISH W/ MELON CILANTRO SALSA

If you've had a taste of the islands, then you should know that our Caribbean cuisines are notorious for bold flavors and fresh ingredients. In my little corner of the world, known as the 'Spice Island', because of the abundance of spices like nutmeg, cinnamon, tumeric (Saffron), cloves and ginger grown here, we take pride in our farm-to-table cuisines and authentic flavors.
My mission is to taste, capture, and share with you some of my favorite Island Recipes from unsung chefs, restaurants and fellow foodies that you can easily whip up right at home.
GRILLED FISH WITH MELON CILANTRO SALSA... Mmm!
This Island Recipe is so easy to prepare and makes for the perfect lunchtime treat. Using a mix of seasonings, fresh fruit and your favorite fish, you'll be filling your kitchen with island aromas in minutes.
HERE'S WHAT YOU'LL NEED:
8 oz fresh fish (Mahi-Mahi, Kingfish, Red Snapper, Tuna)
4 oz watermelon, de-seeded and diced
1 tsp lime juice, freshly squeezed
1 bulb garlic, finely chopped
1 oz onion, finely chopped
1 tsp cilantro, finely chopped
1 tbsp white wine
1 oz olive oil
salt and pepper
Combine watermelon, garlic, onion, cilantro, white wine, lime juice, salt and pepper in a medium bowl. Mix thoroughly and set aside to marinate while you prepare the fish.
Season fish with freshly ground salt and pepper. Heat nonstick frying pan over medium heat, coating bottom with little olive oil and cook fish for about 2-3 minutes on either side.
Plate fish and garnish with your melon cilantro salsa. Serve with a fresh green salad, grilled breadfruit and lime wedge. Salsa should have an almost bland taste to compliment the heavily seasoned fish.
